As I mentioned in July’s Healthy Eats, this summer was a particularly busy one for me. I didn’t have as much time as I would have liked to share all the yummy meals I was enjoying over the course of the past month on Instagram. But I still got a few out and wanted to share them with you here so you can check out the recipes. There’s some really great ones I hope you get a chance to try!
1. Pumpkin Pie Chia Pudding
Some folks don’t crack out the pumpkin recipes until fall but I’m an equal opportunity pumpkin eater. And by equal opportunity, I mean every opportunity. I’m always a fan of my pumpkin-coconut bowl but a couple of weeks ago I decided to shake things up and gave this pumpkin pie chia pudding from The Wheatless Kitchen a whirl. I loved it! It’s super easy and you can keep all the ingredients on hand which is perfect in a pinch.
2. Oatmeal With All The Fixin’s
When you’re allergic to eggs, dairy and yeast like I am, a whole lot of breakfast options go out the window. At home I come up with all kinds of creative meal ideas to start my day but when I’m visiting family or friends or travelling for work as I was in August, oatmeal becomes my go-to. Cooking up rolled oats in nut milk or water and topping it with fruit and chopped nuts makes for an incredibly easy and healthy option wherever you are.
3. Vegan Funfetti Cupcakes
Having food allergies can definitely have its down moments. Missing out on the foods others are enjoying can be saddening at times. But I swear it makes the food even better when you finally find or create an allergy-friendly version. These egg-free, dairy-free funfetti cupcakes from Minimalist Baker made my birthday extra special. And they tasted just as good or better than the traditional variety! 4. Veggie-Filled Vegan Bean Balls
When I got a massive spaghetti squash in my Mama Earth Organics bin I instantly knew there was nothing I would rather do with it than make Oh She Glows’ Italian bean balls and spaghetti squash noodles. This recipe does require a little more time than the recipes I usually make but it is so worth it if you have a little extra time or want to create a special meat-free dinner. (P.S.
